Ingredients

  • 500 g waxy potatoes
  • Salad salt
  • 2 shallots
  • 1 Garlic clove
  • 3 tbsp olive oil
  • 250 ml vegetable broth
  • 60 ml White wine vinegar
  • 1 bay leaf
  • 2 allspice berries
  • pepper (ground)
  • 500 g salmon fillet (ready to cook, skin removed)
  • 0.5 bunch Parsley
  • 0.5 bunch dill
  • 1 tsp Medium Hot Mustard
  • dill sprigs (for garnish)

Instructions

    Wash the potatoes and boil in salted water for about 25 minutes. Drain, let steam off, and peel while still hot. Peel and finely chop the shallots and garlic; sauté them in a pot with the hot oil until translucent. Add the broth and vinegar, drop in the bay leaf and allspice berries, and simmer over medium heat for about 10 minutes. Season with salt and pepper.

    Wash the salmon, pat dry, and cut into thin strips. Wash the herbs, shake off excess water, and finely chop the leaves. Slice the potatoes and mix them with the hot broth, herbs, mustard, and salmon slices. Let rest for 15-20 minutes, season with salt and pepper, plate, and garnish with dill sprigs.
