Ingredients
- 1300 g red cabbage
- 1 tsp salt
- Pepper
- 1 tbsp Raw cane sugar
- 1 tsp ground cinnamon
- 5 tbsp white wine vinegar
- 2 tbsp lemon juice
- 2 tbsp walnut oil
- 50 g walnuts
- 2 oranges

Remove the outer leaves from the cabbage and wash it. Quarter, cut off the core, and slice into fine strips. Toss the strips with 1 tsp salt in a bowl and knead for 4–5 minutes to soften. Drain excess liquid.

Combine the cabbage with pepper, raw cane sugar, cinnamon, vinegar, lemon juice, and walnut oil. Roughly chop the walnuts and toast them in a hot pan without fat until fragrant; remove and let cool.

Peel the oranges with a knife so that all white pith is removed. Cut the fruit segments into wedge shapes with the knife. Roughly slice orange fillets, mix them with the walnuts under the cabbage, and serve the fruity red cabbage salad.
