Raw Salad with Red Beet

Fresh salad featuring red beet, celeriac, tart apples, lemon juice, and walnut oil – a vibrant, healthy option from Spoonsparrow!

Ingredients

  • 300 g small red beet (2 small red beets)
  • 200 g celeriac
  • 2 small tart apples
  • 0.5 lemon (juice)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp walnut oil
  • 1 tbsp Rapeseed Oil
  • 4 tbsp Sour cream
  • 60 g walnuts
  • 2 tbsp chives curls

Instructions

    Peel, wash and grate the beets and celeriac. Wash the apples, quarter them, remove cores and grate as well.

    Whisk lemon juice with salt, pepper, walnut oil and rapeseed oil; mix thoroughly with prepared vegetables. Roughly chop walnuts. Distribute salad into bowls, top each with a tablespoon of sour cream, then sprinkle chives curls and walnuts before serving.
