Ingredients
- 300 g mackerel fillet
- 2 tbsp chili sauce (sweet-spicy)
- 1 tsp red curry paste (mild)
- 1 tbsp lime juice
- 2 tbsp sesame oil
- 1 large cucumber

Preheat the oven to 220°C with fan and top heat.

Rinse the mackerel fillets, pat dry, cut into 12 roughly equal pieces. Place skin-side down on a baking sheet lined with parchment paper. Whisk together chili sauce, curry paste, lime juice, and sesame oil; brush over the fish. Bake for about 5 minutes until cooked through.

Wash the cucumber, trim ends, slice crosswise into 7 pieces. Cut six of those diagonally in half and cut the remaining lengthwise into thin slices or julienne. Arrange on plates, place the fish pieces on top, and serve.
