Ingredients
- 2 Eggs
- 150 g flour
- 2 tsp Baking powder
- 300 ml milk
- 2 tbsp liquid honey
- 1 pinch salt
- 250 g blueberries
- butter (for frying)
- maple syrup

Separate the eggs and chill the whites. Whisk together the flour, baking powder, milk, honey, and yolks until smooth, then let rest for about 15 minutes. Beat the whites with salt until stiff peaks form. Rinse blueberries, drain well, and fold into batter with the meringue.

Heat a bit of butter in a non-stick pan, drop spoonfuls of batter, and cook each side 1-2 minutes until golden brown. Flip and cook the other side for another 1-2 minutes. Repeat until batter is gone, keeping finished pancakes warm at 80°C if desired.

Serve on a plate drizzled with maple syrup as desired.
