Ingredients

  • 125 ml lukewarm milk
  • 20 g yeast
  • 50 g sugar
  • 250 g flour
  • 1 pinch salt
  • 1 egg yolk
  • 100 g butter
  • 3 tbsp ground blanched almond kernels
  • 2 tsp vanilla sugar
  • powdered sugar (for dusting)
  • 50 g Raisins
  • 20 ml cognac

Instructions

    For the buns, mix half of the milk with the yeast, a pinch of sugar and a little flour; cover and let rise in a warm place for about 15–20 minutes. Then combine the remaining milk, sugar, flour, salt, egg yolk, 50 g butter and almonds into a smooth yeasted dough; cover and let rise in a warm, draft‑free spot for about 40–50 minutes. Marinate raisins with cognac.

    Preheat the oven to 200 °C. Grease an ovenproof dish or baking tin with 25 g butter. Shape the dough into a roll with a diameter of 4–5 cm, cut 3 cm thick slices and top each slice with well‑drained raisins. Press the edges together and place the buns seam side down in the prepared dish, snugly next to each other. Let rise again for 15 minutes. Warm the remaining butter with vanilla sugar and brush the tops of the buns. Bake in the hot oven for about 30–35 minutes until golden brown. Dust with powdered sugar before serving.
