Apricot Quark Dumplings

Ingredients

  • 500 g Low-fat quark
  • 200 g Flour
  • 2 Eggs
  • 12 ripe apricots
  • 12 pieces cube sugar
  • flour (for shaping the dumplings)
  • 70 g melted butter
  • sugar
  • Cinnamon

Instructions

    Whisk quark, flour and eggs into a dough and let it rest for about 20 minutes; if too soft, add a bit more flour.

    Wash apricots and dry them, then cut carefully, remove pits and replace each with a piece of cube sugar.

    Bring plenty of lightly salted water to a boil in a large pot.

    Coat each apricot with some dough (a spoon and extra flour on your hands help). Gently drop the dumplings into the water; don't overcrowd so they don't stick together. Stop boiling, just let them sit in hot water until they rise, then cook for about 6 more minutes. Remove with a slotted spoon and pour melted butter over them while warm. Sprinkle with sugar and cinnamon before serving.
