Raisin Cheesecake Sheet Cake

Is a sheet cake cheesecake with raisins boring? Aromatic orange zest is the solution.

Ingredients

  • 100 g raisins
  • 40 ml rum (or apple juice)
  • 2 kg low‑fat quark
  • 1 vanilla pod
  • 50 g candied orange peel
  • 6 Eggs
  • 150 g honey
  • 120 g spelt whole‑grain semolina
  • powdered erythritol sugar for dusting

Instructions

    Soak raisins in rum. Drain the quark well. Split the vanilla pod lengthwise and scrape out the seeds. Finely chop the candied orange peel.

    Whisk together the quark, vanilla seeds, eggs, honey, and semolina until smooth. Stir in the raisins and orange peel thoroughly. Spread the mixture onto a baking sheet lined with parchment paper.

    Bake the cake in a preheated oven at 180 °C (160 °C fan‑forced; gas: level 2–3) for 50–60 minutes. If it darkens too much, cover with foil. Remove, let cool, lift from the sheet and dust with powdered erythritol sugar. Slice and serve.
