Cheesecake with berry sauce from Spoonsparrow: Ready to serve!

Ingredients

  • 180 g oats (or oat cookies)
  • 110 g butter
  • 45 g whole oats
  • 0.5 tsp vanilla powder
  • 800 g cream cheese (quarter-fat; 10% fat in total)
  • 200 g Sour Cream
  • 100 g Granulated Sugar
  • 4 eggs (medium size)
  • 40 g cornstarch
  • 200 g mixed berries

Instructions

    Place the cookies in a clean kitchen towel and crush them into crumbs with a rolling pin. Melt butter in a small pot over low heat and mix with the crumbs and oats.

    Line a springform pan with parchment paper and press the cookie mixture firmly into the bottom.

    For the filling, whisk vanilla powder, cream cheese, sour cream, and sugar until smooth. Add eggs one at a time, then stir in cornstarch briefly.

    Spread the filling over the crust and bake in a preheated oven at 180 °C (160 °C fan‑forced; gas: level 2–3) for 1 hour. Remove the cheesecake from the pan with a knife and let it cool.

    Meanwhile wash, trim, and cut the berries into small pieces. Puree them to make a sauce and serve over the cake.
