Raisin Beer Cake

Ingredients

  • 100 g Soft Butter
  • 200 g sugar
  • 1 packet vanilla sugar
  • 1 tsp cinnamon
  • 2 Eggs (size M)
  • 375 g flour
  • 1 packet baking soda (1 tsp)
  • 250 ml dark beer
  • 250 g raisins
  • 100 g diced candied lemon peel
  • 150 g dark chocolate couverture

Instructions

    Beat the butter until creamy. Gradually add sugar, vanilla sugar, cinnamon and eggs, mixing well. Mix flour with baking soda and sift over the mixture. Stir in the beer. Fold in raisins and candied lemon peel.

    Pour the batter into a greased loaf pan (30x11 cm) and smooth the top. Bake in a preheated oven at 175°C (gas: level 2-3, convection: 160°C) for about 60 minutes. Let the cake rest in the pan for 10 minutes, then transfer to a wire rack to cool.

    Cut the chocolate couverture into pieces, place them in a bowl and melt over a double boiler. Brush the cooled cake with the melted chocolate.
