Radish Sprout Salad

A crisp and hearty raw salad with a fitness factor. One serving of sprout salad contains protein and calcium but very little fat.
Ingredients
- 1 bundle radishes
- 1 small frisée salad
- 0.5 mini cucumber
- 1 Red Onion
- 2 tbsp sprouts (e.g., radish sprouts)
- 2 small pickled cucumbers
- 100 g Harzer cheese
- 3 tbsp light balsamic vinegar
- 2 tbsp classic vegetable broth
- Salt
- Pepper
- 2 tbsp olive oil
- 8 slices whole‑grain baguette
Instructions

Wash, dry and thinly slice the radishes.

Clean, dry and cut the frisée into bite‑sized pieces.

Peel the cucumber and slice it thinly. Peel the onion, halve it and cut into fine rings.

Rinse the sprouts in a sieve and drain well.

Drain the pickled cucumbers and finely chop them. Roughly cube the Harzer cheese.

Whisk together vinegar, vegetable broth, salt, pepper and olive oil in a salad bowl with a whisk.

Add radishes, onions, fresh cucumber, pickled cucumber, cheese and sprouts; mix gently. Let sit for about 10 minutes, then adjust seasoning if needed. Fold in frisée and serve with whole‑grain baguette slices.
