Ingredients

  • 300 g radish
  • 1 stalk leek
  • 3 tbsp white wine vinegar
  • 2 tbsp Soy sauce
  • 1 tbsp honey
  • 3 tbsp peanut oil
  • Salt
  • Cayenne pepper
  • 2 tbsp chopped peanuts
  • 2 tbsp chopped coriander
  • 50 g soybean sprouts
  • 1 small bowl red daikon cress
  • toasted bread (optional)

Instructions

    Wash and clean the radish and leek. Cut the leek lengthwise, then into ~8 cm long pieces and thinly slice them. Peel the radish with a vegetable peeler into thin slices, then cut into ~8 cm long, very thin strips. Soak both in cold water for about 30 minutes.

    Combine vinegar, honey, oil, peanuts, and coriander. Season with salt and cayenne pepper to taste.

    Drain the vegetables and arrange on plates. Pour the dressing over them and sprinkle with soybean sprouts and chopped cress. Serve with toasted bread.
