Ingredients

  • 400 g radish (e.g., Red Meat)
  • 500 g radicchio (e.g., French Breakfast)
  • 2 stalks celery (with greens)
  • 3 tbsp white wine vinegar
  • 2 tbsp Rapeseed oil
  • 2 tbsp grape seed oil
  • 2 tbsp chives, cut into rings
  • Salt
  • ground pepper

Instructions

    Peel the radish and shave it thinly. Wash, trim, and halve smaller radicchio; slice larger radicchio into rounds. Rinse the celery, remove any tough strands if needed, and slice finely. Wash the greens, pat dry, and chop small. For the vinaigrette whisk together vinegar with both oils, chives, salt, pepper, and a pinch of sugar, tasting to adjust.
