Carrot and Radish Salad with Blueberries

Ingredients

  • 100 g carrots (1 carrot)
  • 50 g radishes (1 piece)
  • 80 g blueberries
  • 2 walnut kernels
  • 0.5 small lemon
  • 1 tbsp Rapeseed Oil
  • Salt
  • Pepper

Instructions

  1. 1.

    Wash, peel and clean the carrot and radish.

  2. 2.

    Grate the carrot finely on a box grater and grate the radish finely. Put both into a bowl.

  3. 3.

    Rinse the blueberries briefly in another bowl and drain them well in a sieve.

  4. 4.

    Coarsely chop the walnuts with a large knife. Add them to the berries, carrots and radish.

  5. 5.

    Squeeze half a lemon, measure out 1 tsp of juice and whisk it with the oil in a small bowl.

  6. 6.

    Season the sauce with salt and pepper and pour it over the salad. Mix everything together and serve.
