Radish Potato Soup

Ingredients

  • 3 bunches radishes
  • 350 g starchy cooking potatoes
  • 5 shallots
  • 2 tbsp butter
  • 900 ml vegetable broth (canned)
  • 100 g Sour cream
  • salt (pepper)

Instructions

    Wash the radishes well, set aside a few with their greens and roughly chop the rest with the greens. Peel, wash and cube the potatoes. Peel and dice the shallots. Heat the butter in a pot and sauté the shallots until translucent, then add the potatoes, radishes and greens and brown everything together.

    Pour in the broth, bring to a boil, cover and simmer for 20 minutes. Then puree the soup with an immersion blender, stir in the sour cream, and season with salt and pepper. Slice the remaining radishes thinly, cut the greens into strips, and scatter them over the soup.
