Radish-Matjes Tartare

A light dinner or starter featuring a rich omega‑3 matjes tartare served on whole‑grain bread. The dish combines finely diced smoked herring with crisp radishes, green peppercorns, yogurt and fresh herbs for a refreshing bite.

Ingredients

  • 125 g matjes fillet (2 fillets)
  • 1 tsp pickled green peppercorns
  • 250 g radishes (preferably organic; 1 bunch)
  • 30 g yogurt (3.5% fat)
  • Pepper
  • a pinch of sugar
  • 100 g whole‑grain bread (2 slices)

Instructions

    Pat the matjes fillets dry with paper towels and dice finely.

    Rinse the green peppercorns in a sieve and let them drain.

  3. 3.

    Wash, trim, and finely dice the radishes; add to the matjes. Shake off excess moisture from the radish greens, pluck the leaves, and set aside.

    Chop the green peppercorns, mix into the matjes blend, fold through, and let rest for 10 minutes.

    Set aside some radish leaves for garnish, chop the remaining ones and add to the tartare. Stir in the yogurt.

    Season the tartare with pepper and sugar, spread on whole‑grain bread, and top with the leftover radish leaves.
