Fish Rolls

Ingredients
- 8 salt herring (extracted)
- 8 pickled cucumbers
- 2 red onions
- 2 red chili peppers
- 1 tbsp coriander seeds
- 300 ml white wine vinegar (or fruit vinegar)
- 2 fresh bay leaves
- 1 tbsp sugar
- 1 tbsp salt

Soak the salt herrings for at least 12 hours, then rinse thoroughly and remove any remaining scales. Cut off the heads, fillet the fish while removing the central spine. Rinse the fillets again and drain. Lay the fillets on top of sliced pickles cut lengthwise, roll them up, and secure with toothpicks. Place side by side in a shallow dish. Peel the onions and slice into rings, then sprinkle over the fish.

Wash the chili pepper. Coarsely crush the coriander in a mortar. Boil the vinegar with 200 ml water, the chili pepper, coriander, bay leaves, sugar, and salt.

Let the broth cool slightly, pour it over the fish, and let it chill. Cover and refrigerate for about 2 days.
