Radicchio Walnut Salad with Cheese

A fresh salad featuring radicchio, chicory, young Swiss chard leaves, walnuts and blue cheese, finished with a zesty lemon dressing from Spoonsparrow!
Ingredients
- 1 radicchio
- 1 chicory
- 2 handfuls young Swiss chard leaves
- 100 g walnut kernels
- 150 g blue cheese
- 0.5 lemon (juice)
- 2 tbsp Apple cider vinegar
- 1 tsp medium-hot mustard
- 1 tsp liquid honey
- 4 tbsp rapeseed oil
- Salt
- pepper (ground)
Instructions

Wash, trim, and dry all greens; tear into bite-sized pieces. Toss with walnuts and arrange on plates. Crumble blue cheese over the top.

In a screw-top jar combine lemon juice, vinegar, mustard, honey, oil, salt, and pepper; seal and shake well. Taste and adjust seasoning, then drizzle over the salad before serving.
