Chicken Cooked in Milk with Couscous

Ingredients

  • 1/2 tsp cumin (ground)
  • 1/2 tsp cloves (ground)
  • 1 large onion (halved)
  • 1 chicken (about 1.5 kg)
  • Salt
  • Pepper (freshly ground)
  • 250 g carrots (peeled and diced)
  • 8 stems coriander (bundled)
  • 2 l milk
  • 1.5 kg pumpkin (peeled, seeded, cut into large pieces)
  • 250 g zucchini (halved lengthwise and cut into 3 cm thick pieces)
  • 1 pinch saffron
  • 1 kg couscous
  • 800 ml water
  • 1 tsp salt
  • 80 g Butter

    Remove the chicken and cut into pieces. Arrange the couscous on a large preheated serving plate, press a shallow well in the center. Place the chicken pieces inside, distribute the vegetables around them. Remove onions and coriander from the broth and discard. Serve the milk broth separately in a sauce bowl.
