Chicken Cooked in Milk with Couscous

Ingredients
- 1/2 tsp cumin (ground)
- 1/2 tsp cloves (ground)
- 1 large onion (halved)
- 1 chicken (about 1.5 kg)
- Salt
- Pepper (freshly ground)
- 250 g carrots (peeled and diced)
- 8 stems coriander (bundled)
- 2 l milk
- 1.5 kg pumpkin (peeled, seeded, cut into large pieces)
- 250 g zucchini (halved lengthwise and cut into 3 cm thick pieces)
- 1 pinch saffron
- 1 kg couscous
- 800 ml water
- 1 tsp salt
- 80 g Butter

Remove the chicken and cut into pieces. Arrange the couscous on a large preheated serving plate, press a shallow well in the center. Place the chicken pieces inside, distribute the vegetables around them. Remove onions and coriander from the broth and discard. Serve the milk broth separately in a sauce bowl.
