- 1 large tart apple (Boskop)
- 1 tbsp Lemon Juice
- 3 tbsp sour cream
- 2 tbsp Calvados
- 1 tsp marjoram leaves

Score the skin of the goose breast in a diamond pattern, rub both sides with salt and pepper. Place it skin-side down in a hot oven‑proof pan without fat, reduce to low heat and cook for about 6 minutes, then flip and transfer to a preheated oven at 200°C for about 10 minutes. Remove, wrap in foil and let rest for several minutes.

For the apple gratin whisk together sour cream with Calvados, marjoram, salt and pepper. Butter a small baking dish, spread the mixture on the bottom.

Peel, halve, core the apples and slice thinly. Drizzle immediately with lemon juice, arrange fan‑shaped on the sauce, sprinkle breadcrumbs and dot with small butter pieces. Place the goose breast in the hot oven with the apples and bake until lightly browned. Slice the meat thinly for serving alongside the apple gratin.
