Ingredients

  • 2 chicken breast fillets (about 140 g)
  • Salt
  • pepper (ground)
  • 3 tbsp olive oil
  • 1 Red Onion
  • 1 radicchio
  • 4 oranges
  • 2 handfuls parsley
  • 1 tsp medium-hot mustard
  • 1 tsp Honey
  • 3 tbsp herb vinegar

Instructions

    Rinse the chicken, pat dry and season with salt and pepper. In a hot grill pan, cook in 1 tbsp oil for 2-3 minutes on each side until golden brown. Remove from heat, let rest to finish cooking, then cool.

    Peel the onion, halve it, and slice into thin rings. Separate the radicchio into individual leaves, wash, dry, and tear into smaller pieces. Peel the oranges all around with a sharp knife, removing all white pith. Slice the fruit into rounds and reserve the juice. Rinse the parsley, shake dry, pluck leaves, and roughly chop. Combine onion, radicchio, orange slices, and parsley.

    Whisk together orange juice, mustard, honey, vinegar, and remaining oil; season with salt and pepper. Slice the chicken and mix it with the dressing into the salad. Plate and serve.
