Ingredients
- 400 g young fennel
- 1 radicchio
- 1 Pomegranate
- 150 g sheep cheese
- 4 tbsp white balsamic vinegar
- 1 tbsp Lemon Juice
- 1 tsp liquid honey
- 5 tbsp olive oil
- 2 tbsp freshly chopped parsley
- Salt
- black pepper (freshly ground)

Wash, trim, halve the fennel, remove any tough core if necessary, and slice or shave into fine strips. Set aside some fennel fronds for garnish. Wash, dry, and tear the radicchio into small pieces. Squeeze the pomegranate all around, cut in half, and gently tap out the seeds. Drain the sheep cheese and dice it small. Combine all prepared ingredients in a bowl.

Whisk together vinegar, lemon juice, honey, oil, parsley, salt, and pepper; taste and adjust. Toss the dressing with the salad and serve garnished with fennel fronds.
