Ingredients

  • 600 g beef fillet
  • 6 tbsp oil
  • Turmeric powder
  • 1 pinch cayenne pepper
  • 2 bunch spring onions
  • 1 small baguette
  • 200 g Emmental cheese (chunks)
  • 125 ml whipping cream
  • Salt
  • ground pepper

    1. Slice the beef fillet into fine strips. Mix oil with turmeric and cayenne pepper. Toss the meat with the spiced oil and marinate for about 3 hours, turning occasionally.

    2. Clean and wash the spring onions, then slice them into very thin rings. Place in a bowl. Preheat the raclette appliance. Slice the baguette and toast the slices on the raclette grill.

    3. Grate the cheese coarsely. Whip the cream until stiff peaks form and fold in the grated cheese. Arrange the cheese‑cream mixture and the marinated meat into bowls.

    4. Place spring onion rings into the raclette pans, top with the marinated meat. Sprinkle with salt and pepper, then cover with the cheese‑cream. Bake in the raclette appliance until the cheese‑cream begins to brown slightly. Serve with baguette slices.
