Rabbit in Garlic Sauce

Ingredients
- 20 fresh cloves of garlic
- Salt
- Pepper (freshly ground)
- olive oil
- 150 g pancetta (sliced)
- 800 g rabbit back fillet
- 2 sprigs thyme

Preheat the oven to 180°C with fan and top heat.

Press the garlic cloves and spread them on a baking tray. Drizzle with olive oil and bake for about 20 minutes until the skins loosen and the cloves are soft. Remove from the oven, let cool slightly, then peel off the skins. Blend in a mixer with olive oil to make a fine puree. Season with salt and pepper.

Lay the pancetta slices overlapping each other on a sheet. Wash the rabbit fillets, pat dry, and cut into equal-sized pieces. Drizzle with oil, season with salt and pepper, and place on top of the pancetta slices. Roll up with kitchen twine to secure. Top with thyme sprigs and bake on a rack (with a fat pan underneath) for 25-35 minutes.
