Ingredients
- 600 g rabbit (from the hind leg or back)
- 4 rosemary sprigs
- 2 sage stalks
- 2 tbsp peppercorns
- 3 Garlic cloves
- 100 ml lemon-olive oil

Slice the rabbit meat into thin pieces and lightly pound if desired. Combine with rosemary, sage, and peppercorns in a bowl. Peel and slice the garlic cloves, then scatter over the meat. Drizzle with lemon‑olive oil, cover, and refrigerate for at least 1 hour to marinate.
