Ingredients
- 200 g Quinoa
- 1 Mango
- 1 cucumber
- 3 tomatoes
- 1 red bell pepper
- 150 g Field salad
- 1 Red Onion
- 2 sprigs Mint
- 150 g Feta (45% fat in milk)
- 1 tbsp Olive Oil
- 1 tbsp Apple cider vinegar
- Salt
- Pepper

Rinse the quinoa with cold water, bring it to a boil in a pot with double the amount of water, and cook on low heat for about 10 minutes. Meanwhile, peel the mango, cut it away from the pit, and dice the flesh. Wash, drain, and chop the cucumber, tomatoes, and bell pepper. Wash and spin dry the field salad. Peel and chop the onion. Wash, shake dry, pluck the leaves from the mint, and cut them into strips. Dice the feta.

Drain the quinoa and put it in a bowl. Add the mango, cucumber, tomatoes, bell pepper, field salad, onion, mint, and feta and mix. Season the salad with olive oil, apple cider vinegar, salt, and pepper.
