Ingredients
- 250 g Basmati whole grain rice
- Salt
- 1 Organic Orange
- 40 g Herbs (1 handful; parsley and dill)
- 5 tbsp olive oil
- Pepper
- 600 g Salmon fillet (4 Salmon fillets)
- 50 g Salted Cashews

Cook rice in salted water according to package instructions until al dente.

Meanwhile, wash the orange with hot water, pat dry, zest finely and squeeze the juice. Wash, dry, chop the herbs and mix them with orange juice and zest, 4 tbsp olive oil, salt and pepper for the marinade. Brush a baking dish with the remaining oil. Rinse the salmon under cold water, pat dry and turn it in the marinade.

Roughly chop the nuts. Distribute the rice in the dish, mix in the nuts and place the fish fillets on top. Drizzle with the remaining marinade and bake in a preheated oven at 200 °C (180 °C convection; Gas: Level 3) for approx. 20 minutes.
