Ingredients

  • 600 g chicken minute cutlets
  • Salt
  • Pepper
  • 2 tbsp flour
  • 2 Eggs
  • panko breadcrumbs (for coating)
  • deep-frying oil
  • spring onion rings (for garnish)

    Heat the frying fat.

    Cut the chicken cutlets in half or thirds depending on size. Season with salt and pepper and dust with flour. Beat the eggs in a bowl. Place panko breadcrumbs in a deep dish. Dip each cutlet into the egg mixture, then coat thoroughly in breadcrumbs, pressing them on well. Fry the cutlets in hot oil until golden yellow and drain on kitchen paper. Arrange on plates garnished with spring onions and serve.
