Ingredients
- 4 quince
- 2 tbsp lemon juice
- 20 g butter
- 8 tbsp grape juice
- 3 tbsp red currant jam
- 100 g coarsely chopped pistachios

Peel, halve, and pit the quinces. Bring 1.5 L water with lemon juice to a boil and add the quinces for 1 minute; then remove them from the water and drain.

Grease a fireproof bowl (or baking dish) with butter. Slice four smaller (or one large) quince halves into thin slices and place in the bowl. Spread the remaining four quince halves over the sliced fruit, brush with grape juice and red currant jam. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 15 minutes.

Sprinkle with chopped pistachios and bake for an additional 6–8 minutes. Serve warm.
