Quince Jam with Lemon Juice

Ingredients
- 2 kg quinces
- 1 lemon (juice)
- 1 kg gelatin sugar

Rub the quinces with a cloth and wash them. Remove the stem and blossom, then cut into cubes with skin and core intact.

Place in a pot and cover with 1 ½ liters of water. Add lemon juice and bring to a boil; simmer uncovered for about 45 minutes until soft.

Lay a cloth over a large sieve set over a bowl or pot, pour the quince pieces with juice through it, and let drain. Squeeze out remaining juice from the fruit pieces using the cloth.

Let the quince juice cool completely.

Measure 1 l of juice, mix with gelatin sugar, and bring to a rolling boil in a large pot over high heat while stirring constantly; simmer for 4 minutes, stirring frequently.

Remove the pot from the stove. Fill hot-washed jars almost to the brim and seal tightly with screw caps immediately. Place on the cap side for 10 min, flip, and let cool.
