Ingredients

  • 1 kg quince
  • 1 vanilla pod
  • sugar

    Peel and core the quinces. Cut into pieces and place in a large pot. Cover with water and add the vanilla pod. Cover and simmer for 40 minutes until soft. Remove with a slotted spoon and transfer to a bowl. (Optional: make quince jelly from the syrup).

    Weigh the quinces and return them to the pot. Add an equal amount of sugar and dissolve it over low heat by gentle stirring. Simmer for 1 hour until the quinces reduce into a coral‑red paste.

    Preheat the oven to 50 °C. Line a baking sheet with parchment paper. Spread the mixture on the sheet and smooth it out. Bake for 1 hour – this sets the quince cheese faster. Let cool, cut into pieces, and store in the refrigerator.
