Ingredients
- 1 kg quince
- Lemon
- 1 kg sugar
- 16 sheets gelatin
Instructions

Rub the quinces with a cloth, remove blossoms and stem bases, cut into eighths.

Boil lemon juice with 1 ¼ l water, add quince pieces, cover and simmer for 40 minutes. Let cool, drain, and press through a cloth to collect the juice. Measure 1 l of quince juice, mix with sugar, cook for 4 minutes, set aside and let slightly cool.

Dissolve gelatin in cold water, whisk well with the quince mixture. Pour into a shallow dish, cover, and refrigerate until set. Cut into cubes before serving and roll in powdered sugar.
