Pavlova with Quince Compote

- 3 egg whites
- 150 g powdered sugar
- 2 tsp lemon juice
- 1 tsp spice cake spice
- 300 ml whipping cream
- 2 drops vanilla aroma
- 400 g quince compote

Preheat the oven to 100°C (200°F) with upper and lower heat.

Beat the egg whites with the lemon juice until semi-firm. Mix the powdered sugar with the spice cake spice and fold into the whipped mixture until a smooth glossy batter forms. Fill a piping bag with a round tip and pipe approximately 8 cm circles onto a baking sheet lined with parchment paper. Pipe two additional rounds on the edges of each circle to create small tarts. Bake in the oven for about 1.5 hours, allowing them to dry. Keep the oven slightly ajar, e.g., by placing a wooden spoon in the door. Let the tarts cool completely after baking.

Whip the cream with vanilla aroma until stiff and fill each Pavlova with 2–3 tablespoons. Spoon 2 tablespoons of quince compote onto each and serve.
