Ingredients
- 4 quines
- 100 ml apple juice
- 2 tbsp honey
- 2 tbsp butter
- 1 tbsp freshly chopped ginger
- 1 stick cinnamon
- 2 Bay leaves
- 1 Vanilla bean

Preheat the oven to 160°C (320°F) with both fan and top heating.

Rub the quinces with a kitchen towel, peel, quarter, optionally remove the core, and cut into wedges. Spread them on a baking tray. Warm the apple juice with honey, butter, ginger, bay leaves and split vanilla bean in half lengthwise, then pour over the quinces.

Bake for about 40 minutes until soft, turning occasionally.

Serve with whipped cream if desired.
