Quince Cake Basic Recipe

Ingredients
- 800 g quines
- 2 tbsp sugar
- 100 ml white grape juice
- 250 g soft butter
- 1 tsp grated lemon zest
- 200 g whole grain sugar
- 4 eggs
- 150 g flour
- 150 g spelt whole wheat flour
- 1 tsp Baking powder
- 50 ml whipping cream
- 30 g chopped almonds
- 2 tbsp powdered sugar

Wash and dry the quines. Trim stems and flower buds, peel and cut lengthwise into eighths. Remove the core and dice. Steam with sugar and grape juice in a small pot over medium heat for about 10 minutes until tender. Drain in a sieve and let cool.

If necessary, grease a springform pan with butter. Preheat the oven to 180°C (fan 160°C; gas: level 2–3).

For the dough, beat butter with lemon zest and whole grain sugar until fluffy. Add eggs one at a time, mixing well after each addition. Combine both flours with baking powder, add to the butter‑egg mixture, and alternately fold in the cream. Pour the batter into the pan and smooth the surface. Distribute quince pieces on top.

Sprinkle chopped almonds over the cake and bake in the preheated oven for about 1 hour. Remove and immediately dust with powdered sugar. Let cool in the pan.
