Apple Tart

Ingredients
- 200 g flour (Type 1050)
- flour for dusting the work surface
- 1 pinch salt
- 100 g cold butter
- 5 apples (e.g., Boskop)
- 2 tbsp lemon juice
- 400 g Low-fat quark
- 1 egg yolk
- 50 g raw cane sugar powder
- 50 ml Apple Juice
- 1 tbsp Cornstarch
- 2 tbsp almond slivers

For the dough, mix flour with salt. Add cold butter in small pieces with a little cold water and quickly knead by hand into a smooth dough, shape it into a ball, wrap in cling film, chill for 30 minutes.

Wash apples, quarter them, remove core, cut into slices. Drizzle with lemon juice. Mix quark with egg yolk, powdered sugar, apple juice and cornstarch.

If needed, butter the tart pan. Roll out dough on floured surface, line the pan and form a rim. Prick the base several times with a fork. Spread quark cream over the dough base. Arrange apple slices in fan shape, sprinkle almonds on top and bake in preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 40 minutes until golden brown. Remove and serve warm or cooled, cut into pieces.
