Quick Evening Pasta

Fast after-work pasta from Spoonsparrow can be varied easily and is on the table in only 15 minutes.

Ingredients

  • 400 g buckwheat noodles (spaghetti)
  • Salt
  • 0.5 bunch arugula (40 g)
  • 2 chili peppers
  • 3 Garlic cloves
  • 3 tbsp walnut kernels (15 g each)
  • 5 tbsp olive oil
  • Pepper
  • 300 g frozen princess beans

Instructions

    Cook spaghetti according to package instructions in plenty of boiling salted water for 8–11 minutes until al dente; then drain and set aside.

    Meanwhile wash and dry arugula. Halve chili peppers lengthwise, deseed, rinse, and chop. Peel garlic and finely dice. Roughly chop walnuts. Combine all with olive oil and lightly pulse to a chunky paste, seasoning with salt and pepper.

    Cook beans in a little salted water for 5–7 minutes, then drain. Toss noodles with the pesto-like mixture and beans, serve immediately.
