Ingredients
- 400 g soba noodles
- Salt
- 500 g carrots
- 1 bunch coriander (cilantro)
- 1.5 cm fresh ginger
- 100 g salted peanut kernels
- light soy sauce
- 0.5 tsp Chili flakes
- lime juice
- 1 untreated lime (cut into wedges)

Cook the noodles in boiling salted water until al dente.

Meanwhile, peel and julienne the carrots. Rinse the coriander, shake dry, and roughly chop the leaves. Peel and grate the ginger finely. In a hot wok without added fat, toast the peanuts until golden brown, remove, and coarsely chop them. Heat oil in the wok and sauté the ginger with the carrots.

Drain the noodles, let them drip, then toss them with coriander and peanuts along with soy sauce, chili flakes, and lime juice to taste. Plate on warmed dishes and serve with a lime wedge on each plate.
