Quick cinnamon stars from Spoonsparrow are always well received.

Ingredients

  • 3 egg whites
  • 1 tsp lemon juice
  • 225 g ground almonds
  • 80 g powdered sugar (from erythritol)
  • 1 tbsp cinnamon

Instructions

    Beat 2 egg whites with lemon juice until stiff peaks form. Mix almonds with 60 g powdered sugar and cinnamon, then fold into the meringue to create a pliable dough. Wrap dough in plastic wrap and chill for about 20 minutes.

    Whip remaining egg white until stiff, gradually adding the rest of the powdered sugar.

    Roll dough between two sheets of parchment paper to a thickness of about 8 mm and cut out star shapes. Brush stars with glaze and bake in a preheated oven at 150 °C (fan‑forced 130 °C; gas: level 1–2) for 20 minutes.
