Apple Calvados Crepes
The Apple-Calvados-Crepes from Spoonsparrow are a delicious and healthy dessert for Calvados fans!
Ingredients
- 80 g wheat flour type 1050
- 1 pinch salt
- 1 egg yolk
- 2 Eggs
- 100 ml milk (3.5% fat)
- 100 ml sparkling water
- 5 tbsp butter
- 2 Apples
- 2 tbsp lemon juice
- 3 tbsp Calvados
- 1 tbsp honey
- 2 tbsp powdered sugar from raw cane sugar

Whisk flour, salt, egg yolk and eggs in a bowl until smooth. Add milk and sparkling water, stir in 2 tbsp melted butter, and let rest for 1 hour.

Wash apples, quarter them, remove cores, slice thinly lengthwise, and immediately drizzle with lemon juice. Melt 1 tbsp butter in a pan, add apples, Calvados and honey, cook over low heat for 2–3 minutes; apples should not break apart.

Heat some of the remaining butter in a cast‑iron skillet. Pour a small ladleful of batter into the pan, rotate and swirl to spread thinly across the surface. Bake until light brown, flip with a spatula or large lid, bake the second side. Repeat to make 8 crepes, then keep warm in an oven at 80 °C (fan 60 °C; gas: level 1).

Fill each crepe with Calvados apples, fold decoratively, dust with powdered sugar and serve on a plate.
