Ingredients

  • 500 g spelt flour type 1050
  • 1 packet dry yeast
  • 125 g whole cane sugar
  • 1 vanilla pod
  • 1 drop lemon (lemon)
  • Salt
  • 1 egg
  • 200 ml lukewarm milk
  • 100 g cold melted butter

Instructions

    Mix the flour with the dry yeast in a bowl. Split the vanilla pod lengthwise and scrape out the seeds with a knife. Wash the lemon hot, dry it, and finely grate its zest. Then add the vanilla seeds together with whole cane sugar, lemon oil, salt, egg, milk, and butter. Process everything with the kneading hooks of the hand mixer into a smooth dough. Cover and let rise in a warm place for about 30 minutes until the dough has visibly increased.

    Briefly knead the dough on a floured work surface, shape it into a roll, and divide it into about 12 equal portions. Shape each portion into a ball.

    Melt butter and pour it into a baking dish. Place the yeast balls in the dish without overcrowding. Whisk egg yolk and milk together and brush the dough with this mixture. Bake in a preheated oven at 200°C (gas: level 3-4, convection: 180°C) for 20-30 minutes. Serve with vanilla sauce or compote.
