Passion Fruit Tartlets

Passion fruit tartlets with fresh berries: These little cakes come together even when short on time – within an hour the fruity tartlets are ready.

Ingredients

  • 5 passion fruits
  • 2 Eggs
  • 50 g sugar (2 heaping tbsp)
  • 500 g Low-fat quark
  • 30 g flour (2 tbsp)
  • liquid sweetener (optional)
  • 100 g mixed berries (variety of choice)

Instructions

    Halve the passion fruits and scoop out the pulp with a teaspoon. Place the pulp from one fruit in a small bowl, the pulp from the remaining four fruits in a second bowl.

    Separate the eggs. Beat the egg whites in a tall container with a hand mixer until stiff peaks form, gradually adding 2/3 of the sugar as you go.

    Add the quark, remaining sugar, flour, yolks and the pulp from the four passion fruits to a large bowl. Mix well with the hand mixer.

    Gently fold the beaten egg whites into the batter with a whisk and sweeten to taste with a few drops of liquid sweetener if desired.

    Place paper liners in a muffin tin, spoon the batter carefully into each liner and smooth the tops. Bake in a preheated oven at 180 °C (fan: 160 °C, gas: level 2–3) for 20‑25 minutes. Let cool completely on a rack while still in the tins.

    Wash, dry and optionally chop the berries. Mix with the remaining passion fruit pulp. Spoon onto the cooled tartlets and serve.
