Blueberry Tartlets

The Blueberry Tartlets from Spoonsparrow are a wonderful summer treat.
Ingredients
- 250 g flour
- 125 g butter
- 2 Eggs
- 400 g blueberries
- 1 egg
- 2 egg yolks
- 200 g Sour Cream
- 3 tbsp sugar
- 2 tbsp lemon juice
- 2 tbsp powdered sugar

Sift the flour onto a work surface, create a well in the center, add the eggs, place butter pieces on the rim and mix everything together. Quickly knead into dough, shape into a ball, wrap in foil and refrigerate for 1 hour.

Roll out the dough on a work surface and line eight tartlet tins with it. Prick the bottom several times with a fork and bake the tartlets in a preheated oven at 175 °C for 10 minutes.

Whisk together egg, yolks, sour cream and sugar, season with lemon juice. Sift the blueberries, spread them over the tartlet bottoms and pour the custard over them. Bake in the oven at 180 °C for 20 minutes. Sprinkle powdered sugar before serving.
