Quick Bread Salad
A quick bread salad suitable as an appetizer, side dish or main course that always tastes great.
Ingredients
- 2 small pita breads
- 1 cucumber
- 2 Tomatoes
- 2 red bell peppers
- 0.5 iceberg lettuce
- 0.5 bunch Parsley
- 1 Shallot
- 1 Garlic clove
- 0.5 bunch spring onions
- 6 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 tablespoons white balsamic vinegar
- Sea salt
- ground pepper
Instructions

Dice pita breads and fry in about 3 tablespoons olive oil until golden brown; drain on kitchen paper.

Wash cucumber, trim ends, halve lengthwise, remove seeds and dice.

Wash tomatoes, quarter, remove seeds and stem base, then dice.

Wash bell peppers, quarter, deseed and remove white membranes, then dice.

Wash iceberg lettuce, clean, and cut into strips.

Wash parsley, shake dry, pluck leaves and set aside for garnish; roughly chop the rest.

Peel shallot and garlic, finely mince them.

Wash spring onions, trim, and slice into rings.

Add remaining oil with lemon juice and balsamic vinegar to a bowl.

Combine all ingredients except pita, mix well, season with salt and pepper, then fold in pita cubes. Serve garnished with parsley.
