Ingredients

  • 250 g cocktail tomatoes
  • 300 g pre-cooked shrimp
  • Salt
  • pepper (ground)
  • olive oil
  • 1 clove garlic (finely chopped)
  • 4 tbsp grated Parmesan
  • juice of 1 lemon
  • 4 handfuls rocket
  • 2 Pane Carasau flatbreads

Instructions

    Wash and halve the tomatoes. Heat 2 tbsp olive oil in a pan and gently sear the shrimp on both sides. Add the garlic and sauté briefly. Season with salt and pepper. Let cool.

    Break the Carasau bread into pieces. Arrange tomatoes, shrimp, bread pieces, and rocket on small plates. Sprinkle grated parmesan over them. Mix 4 tbsp olive oil, lemon juice, salt, and pepper to make a dressing. Drizzle the salad with this sauce and serve immediately.
