Ingredients

  • 250 g Italian country loaf
  • 4 tbsp black pitted olives
  • 1 Red Onion
  • 300 g yellow and red cherry tomatoes
  • 200 g Roma tomato
  • 0.5 bunch Basil
  • 4 tbsp olive oil
  • 2 tbsp white wine vinegar
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp capers (jar)

Instructions

    Preheat the oven to 240°C (464°F).

    Slice the loaf into 2 cm thick slices and briefly toast in the oven until pale. Remove, let cool, then tear into bite‑sized pieces. Drain the olives well. Peel the onion and cut into thin strips. Wash the tomatoes and halve or quarter them. Rinse the basil, shake dry, and pluck the leaves. Whisk the oil with vinegar and season with salt and pepper.

    Combine all salad ingredients with the vinaigrette, adjust seasoning, and serve plated.
