Quiche with Cod and Shrimp

- 1 round puff pastry base (from the refrigerated section)
- 300 g cod fillet
- 250 g fresh shrimp (prepped for cooking)
- 4 eggs (hard-boiled)
- 1 organic lemon (juice and zest)
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 250 g sour cream
- 2 tbsp olive oil
- 1 egg yolk

Preheat the oven to 160°C fan-forced. Roll out the puff pastry and place it on a round baking sheet. Prick the dough lightly with a fork. Slice the cod fillet into thin slices and drizzle with lemon juice. Mix the sour cream with the egg yolk, olive oil, lemon zest, salt, pepper, and nutmeg.

Spread the cod evenly over the pastry and pour the sour cream mixture on top. Peel the hard-boiled eggs and cut them into wedges, then arrange them ring-shaped over the sauce. Place the shrimp between the egg wedges. Sprinkle the quiche with salt and pepper and bake in the hot oven for 25-30 minutes until golden brown. Serve immediately.
