Ingredients

  • 1 bulb fennel
  • 3 apples
  • 220 g flour
  • 100 g quark (fresh cheese)
  • 125 g butter
  • a pinch of salt
  • 250 ml Whipping Cream
  • 150 g crème fraîche
  • 3 eggs
  • Salt
  • pepper (ground)
  • Nutmeg (freshly grated)
  • 100 g freshly grated Parmesan

Instructions

    Preheat the oven to 180°C with upper and lower heat.

    Wash, trim, quarter the fennel and remove the core. Slice the fennel into thin strips.

    Peel, quarter the apples, remove the core and slice lengthwise into thin slices. Drizzle immediately with lemon juice.

    Knead flour, quark, butter and salt into a smooth dough.

    Roll out the dough thinly, line the greased quiche tin and form a 2 cm high edge.

    Whisk together cream, crème fraîche and eggs, seasoning well with salt, pepper and nutmeg. Arrange apple and fennel slices on the dough base and pour the egg mixture over them. Sprinkle with parmesan and bake in the preheated oven on the middle rack for about 40 minutes until golden brown.
