Broccoli Quiche

Ingredients

  • 250 g flour
  • 125 g butter
  • 1 pinch salt
  • 1 egg
  • Salt
  • pepper (ground)
  • 400 g Broccoli
  • 1 Carrot
  • 200 g whipping cream
  • 4 eggs
  • 150 g grated Gruyère cheese

Instructions

    Sift the flour onto a work surface, mix with salt and create a well in the center. Cut cold butter into small pieces, distribute around the well, add the egg, pour in 2-3 tbsp lukewarm water, then use a knife to cut through all ingredients until small dough crumbs form; quickly knead by hand into a dough, shape into a ball, wrap in cling film and chill for about 30 minutes.

    Wash, trim, and cut broccoli into small florets. Peel the carrot and slice thinly. Blanch both in boiling salted water for 3 minutes, drain, shock immediately in ice water, then let dry.

    Whisk cream with eggs, stir in cheese, season with nutmeg, pepper, and salt. Roll out dough thinly and line buttered tins with it. Distribute broccoli and carrots inside, pour the egg‑cream mixture over them. Bake in a preheated oven at 200°C (middle rack) for about 30 minutes.
