Quarkstollen

Ingredients
- 200 g mixed dried fruit (apricots, pears, plums.. )
- 100 g raisins
- 100 g shelled almonds
- 80 g liquid honey
- 0.2 l lukewarm milk
- 1 cube yeast
- 500 g whole wheat flour
- 1 egg
- 150 g butter
- 250 g quark
- 0.5 tsp cardamom (ground)
- 0.5 tsp cinnamon (ground)
- 0.25 tsp nutmeg blossom
- liquid butter (for brushing)
- powdered sugar
Instructions

Cut the dried fruit into small cubes and mix with raisins, almonds, and honey; then pour half of the lukewarm milk over it, cover, and let soak for about 1 hour.

Dissolve the yeast in the remaining milk. Add flour, egg, butter, quark, and spices, then knead into a dough. Cover and let rise at room temperature for 1 hour.

Preheat the oven to 190 °C.

Work the fruit mixture into the dough, kneading vigorously. Shape into a stollen loaf, place on parchment paper-lined baking sheet, and allow to rise again for 30 minutes.

Bake the stollen in the preheated oven for 30 minutes, then reduce temperature to 160 °C and bake another 30 minutes. Brush with melted butter while still hot. Dust generously with powdered sugar before serving.
